Q: Would these be suitable for posting a 5” x 7” boxes greeting card through the post?

It would be just about possible to use these on your 7" x 5" boxes if you allow the envelope to overlap the sides of the box by 1" each side, you just have to make sure that your address label is smaller than the 7 x 5 and shows fully on the top of the box. If you are in business and are sending these boxes out on a regular basis you might be well advised to order a smaller size of document case and print your labels at a suitable smaller size, say 6" x 4" or even 5" x 3" , it will make your brand image seem so much more professional

Q: Can I stick on box but still be able to enclose and remove document more than once? I want to use for listing changing contents.

You could if you didn't stick down the top strip of peel back sticky backing. Ie it's made up of 2 strips one large piece which sticks to the box with another thin strip across the top. So leave that on and then you would be able to access the contents. The plastic is only thin though, I dont know how much wear and tear it would stand up to.

The whole back has a peel off sheet. And there is a separate peel off strip to seal it. I would recommend for boxes and very stiff envelopes. Not paper envelopes as can be hard to attach.
